I didn't post a recipe last week because we had quite the cooking disaster here at 319! I was in the process of making enchiladas that my friend Carrie gave me the recipe for. I had put them all together and they were cooking in the oven. I had to feed Kason, so I asked Duane to take them out and start the rice and beans. He did as I asked (such a good husband!:)) and then went outside to finish mowing the grass. Once I finished feeding Kason I started to walk into the kitchen when I heard a loud popping noise and the sound of glass shattering. I walked into the kitchen and saw that the glass cooking dish with the enchiladas had exploded! There was glass everywhere and the enchiladas were burning like crazy! I ran outside to get Duane and he realized he had turned on the wrong burner on the stove and then set the baking dish on that burner. Oops! I wanted to take a picture of the mess but I was so shaken up that I totally forgot! I'm going to attempt the enchiladas again this week..hopefully! :)
Tonight I made this...
Now the recipe picture looked a lot prettier than mine turned out, but let me tell you, they tasted delicious! I think it's one of my favorite things I've made to date. They were tasty, but I'll warn you, they were messy to make! I had not anticipated that but soon learned that there would be a lot of clean up with this recipe! I won't list all the exact measurements for all the ingredients, but you can find them here.
Here's what you need...

The first thing I did was put the chicken into boiling water. I added some crushed red pepper and italian seasoning. I did this so that I could shred the chicken. I boiled the chicken for about a half an hour.
When the chicken had about 15 minutes left, I boiled some water and threw in the lasagna noodles.
As the noodles and chicken we cooking, I mixed the rest of the ingredients into a bowl. I think I messed this part of the recipe up a little bit, but it still worked out! Just warning you..if you look at the recipe on the website, it might be a little different! :)
I then shredded the chicken and added it, along with the cheese and eggs, to the sauce mixture.
Once I had the sauce mixture all in the bowl, I got the noodles and laid them on a baking sheet. I put the mixture in the noodles, rolled them up, and put them in the baking dish. This was the messy part!! (I put some of the sauce mixture on the bottom of the baking dish and then laid the roll-ups on top.)
Once they were all in the dish I covered the top of them with the remaining sauce mixture and mozzarella cheese. I popped them in the over (preheated to 375 degrees).
It baked for about 25 minutes and then was ready to eat!
It was a carb loaded dinner..but it was gooood! :)
