Tonight I made something other than pasta. I figured I should branch out a bit. Instead I cooked using this...
Don't worry..we didn't have cereal for dinner. I made no-fry chicken that I found here. I really like this website because they have easy, quick recipes...and you know that's my kinda meal! With the chicken I made some potatoes. Now, I can't take credit for these because my friend Carrie makes them all the time and she is who I got the "recipe" from.
The first thing I did was chop up 2 potatoes.
After they were cut, I placed them in a baking dish. I drizzled them with vegetable oil and sprinkled salt and pepper on top.
I put them to cook on 350 degrees for 20 minutes.
While they were cooking I defrosted 1 lb. of chicken. While the chicken was defrosting I crushed up 3/4 of a cup of corn flakes.
In a bowl I mixed the corn flakes with 1/8 of a tsp. of crushed red and black pepper along with 1/2 tsp of garlic powder. In another bowl I used 1/4 of a cup of chicken broth.
I coated the defrosted chicken in chicken broth and then dipped each piece into the corn flake mixture. After the chicken was coated, I placed it in a baking dish.
I bumped the over temp. up to 400 degrees, took the potatoes out and flipped them, and then put both the potatoes and chicken (along with some roles) in the oven for 20 minutes.
After 20 minutes, I had a delicious meal! I love fried chicken, and this is a little bit of a healthier version. It tasted great and I will definitely be making it again soon!
